Weekly Roasted Veg Tray, Four Ways

One hot tray, four flavour finishes — the Sunday side that covers lunches all week and drags every fiber number up where it needs to be.

Method

The Sunday anchor. One tray of roasted veg covers four or five days of sides and bowl-builders, and the four finishes below mean it never tastes like the same meal twice. Dense, floret, and soft veg share the oven on a stagger — start the dense stuff first.

Method

1. Base Method

Oven at 425°F / 220°C. Cut everything to a similar size, toss with 1.5–2 tbsp olive oil per tray, and spread in a single layer with space between pieces. Salt before it goes in. Dense veg (carrots, Brussels sprouts, cabbage wedges, red onion) needs 25–35 min; florets (broccoli, cauliflower) 20–25 min; soft veg (peppers) about 15 min — start the dense veg first and add the soft veg halfway through.

2. Lemon-Garlic + Feta

Toss the veg with olive oil, garlic, and lemon zest before roasting. Finish with crumbled feta and herbs. This is the one that pairs with fish mains.

3. Smoked Paprika + Chickpeas

Add 1 cup cooked chickpeas to the tray, tossed in smoked paprika and cumin — they only need 15 minutes, so add them partway through. Finish with lime.

4. Miso-Sesame

Toss the veg with 1.5 tbsp white miso + 1 tbsp sesame oil, thinned with a little water so it coats. Finish with sesame seeds and scallion. Pairs with tofu or shrimp.

5. Curry + Yogurt

Toss with olive oil and curry powder before roasting, then finish with a yogurt drizzle. Pairs with dal.

Notes

  • Single layer, space between pieces — crowding steams the veg instead of roasting it. Two trays beat one crowded tray.
  • Cool completely before boxing up. Airtight container, fridge, 4–5 days.
  • Reheat in a 400°F oven or a dry skillet for 5–8 minutes. Never the microwave — you'll lose everything the roasting gave you.
  • The chickpea variation adds ~7g protein + 6g fiber per ½ cup — the easiest way to move a meal toward the 30–40g fiber target.
  • Bulk-prep pattern — roast this tray on Sunday alongside a grain batch and a lentil batch, and several lunches are covered before the week starts.
